If you are not rooted Joe then I doubt you can turn it off. But there is a way to stop it.  It is because your aux plug has 3 connections instead of 4.  Notice the 4 connections in the pic below. The large one on yours  bridges together the ground and the mic contact. As your plug moves and the spring contacts inside the phone get looser the connection tends to bounce (a quick disconnect and reconnect of this short).   Pick up one of these and put it between the aux cable and your phone. It will prevent the 2 contacts from grounding out. These should be available locally at radio shack or an electronics store also.

If you remember we had the same issue with that impression when using an incompatible adater.

The type of cable you should be using is the same as RadioShack catalog #42-2387. You will notice that it has 2 black bands on the plug signifying that there are 3 connectors for this cable: left channel, right channel, and ground. I use the 1ft. version of this cable to connect my Inspire to my car radio via the aux input, and I have no trouble with the accidental activation of the voice dialing feature. At most, you'll hear all phone audio via your car speakers, including that from phone calls and any notifications, when connected to your radio. BTW, I work for RadioShack, but I'm only mentioning this product so you have a photo reference.

Pay attention to what I said Joe. Most people do not have the issue at first with just using headphones without mic or an aux cable like you are using(2 bands).  The phone is supposed to detect what you have plugged in. But many have issues like you are experiencing. Placing that cable(3 bands) in between will stop the auto dialing, music pausing, or tracks switching. This will separate the ground from the mic connection.

Just seen on another forum that there is an app on the market called 'Headset blocker'. Gets good reviews and is designed to stop these issues from happening.  Give it a try.

Thats good because I found one person that was still having this issue using the default 4 band headphones.  Just curious Joe, do you have more than 1 music player app installed?
